Andouille Chicken Sausage Cajun Pizza

Cajun style flatbread featuring Andouille chicken sausage with peppers, cheese, and a garlic bechamel sauce.

Ingredients

  • 1-2 cups Andouille chicken sausage, sliced 1/2 inch thick
  • 1/2 - 1 cup colorful bell peppers
  • 1/2 - 1 cup onion
  • 1-2 cups Mozzarella cheese, shredded
  • 1/2 - 1 cup Gouda cheese, shredded
  • Hot sauce for topping
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 clove minced garlic
  • 1/4 onion minced
  • 1/4 tsp Creole seasoning
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 11/2 cups milk
  • 16 inch flatbread pizza crust or pizza dough
  • Olive oil
  • Kosher salt

Directions

  1. Heat butter and flour in saucepan until light brown, add garlic and onion and cook over med-low heat until onions are translucent.

  2. Add seasonings and slowly whisk in milk until the sauce is smooth. Simmer a few minutes and remove from heat.

  3. Heat oven to 425°

  4. If using fresh pizza dough, roll out on floured surface until thin. Bake until just beginning to brown.

  5. Put pizza crust onto pan, brush with olive oil and sprinkle with salt. Top with béchamel sauce, mozzarella, Gouda, sausage, peppers and onion.

  7. Bake 8-12 minutes until cheese is bubbly and browning.

  8. Cool for a few moments, slice and garnish a sprinkle of Cajun seasoning.
