Oatmeal, Quinoa Porridge with Fruit Compote

Hearty oatmeal with a side of chicken breakfast sausage for a health conscious eater.

Ingredients

  • 3 CHEF'S CRAFT® chicken breakfast sausages
  • Porridge
  • 1/2 cup old fashioned oats
  • 1/2 cup quinoa
  • 1 tablespoon brown sugar
  • 1 cup low fat milk
  • 1 1/2 cup water
  • 1 teaspoon cinnamon
  • Dash salt
Apple & Peach Compote
  • 1 apple - diced
  • 1 peach - diced
  • 1/2 cup frozen or fresh cranberries
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
Toppings
  • Toasted coconut
  • Pecans
  • Honey or sugar

Directions

  1. Heat milk, water, brown sugar, salt and cinnamon to a simmer. Continue to simmer, add oats and quinoa and cook 20-25 minutes stirring often.

  2. Fruit compote, combine all ingredients in small sauce pan and simmer 15 minutes.

  3. Lightly coat skillet with a small amount of oil. Sauté CHEF’S CRAFT® chicken breakfast sausages over medium-high heat for 3–5 minutes or until sausages reach 145ºF. Sausages will achieve a golden brown color.

  4. Top porridge with fruit compote and desired toppings served with CHEF’S CRAFT® chicken breakfast sausage on the side.
