Summer Berry Salad with Poppyseed Dressing

Ingredients
- 1 bag CHEF’S CRAFT® Flame Grilled Chicken Breast Fillets, cooked according to package directions and sliced
- 3 romaine lettuce hearts, chopped
- 1 1/2 cups sliced strawberries
- 1 cup blueberries
- 1 avocado, thinly sliced
- 1 (11 ounce) can mandarin oranges in juice, drained
- 1 (20 ounce) can pineapple chunks in juice, drained
- 1/2 cup chopped roasted pecans
- Poppyseed Dressing (recipe below)
Poppyseed Dressing
- 1/2 cup extra virgin olive oil
- 1 tablespoon champagne vinegar
- 1 tablespoon honey
- 1 tablespoon orange juice
- 1 tablespoon poppy seeds
- 1/2 lemon, juiced
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- Kosher salt
- Freshly ground black pepper
Directions
Heat chicken according to package directions and slice into strips.
Meanwhile, whisk together dressing ingredients in a small bowl until well combined. Season with Kosher salt and pepper. Alternatively, shake together dressing ingredients in a mason jar.
Combine salad ingredients in a large bowl and drizzle in desired amount of dressing. Toss to combine and serve immediately.
